Almond Butter Energy Bites

I didn’t think I was a snacker until I chose to stay home when my daughter was born. I thought I had turned into a bottomless pit, then I realized I was snacking on empty things like goldfish crackers (which are so delish BTW). After this realization I decided to add things to our meal plan that I can keep in the fridge that are good for me and filling too. That’s how these puppies came to be. Between the flax, chia and almond butter, I feel satisfied for a good amount of time but don’t feel yucky like I would for eating processed snacks all day. As a bonus I can even send them to Mother’s Day Out with my daughter because they are peanut free!

If you’ve been feeling the need for a little healthy change in your daily routine, give these a try!

Happy cooking, friends!

Almond Butter Energy Bites

Prep 10 mins∙ Cook 10 mins∙ Makes Servings: 18 bites∙

  • 1/2 cup chocolate chips
  • 1 cup old fashioned oats
  • 1/2 cup flax meal
  • 1 tablespoon chia seeds
  • 2/3 cup almond butter
  • 1/4 cup good honey *like Nature Nate’s pictured above
  • 1 scoop plant based vanilla protein powder (optional)

Get out your biggest bowl and stir together all the ingredients until well combined.

Roll into balls (I used my cookie scooper to get them all even, then lightly rolled in my hands)

Store in tupperware or gallon ziplock bag in the fridge.

Sam’s Tips:

If almond butter stresses you out because of all the oil at the top, FEAR NOT! Just put one beater into your hand mixer, HOLD YOUR JAR, and mix it up! Once mixed put almond butter in the fridge and it will stay all mixed together!
